Pumpkin winter soup recipe

With its nutritional content, pumpkin is very beneficial for our health. Pumpkin winter soup, which has become indispensable for winter days, plays a big role in strengthening the immune system. Nutrition and Diet Specialist shared the recipe for both delicious and easy pumpkin soup. 

Rich in beta carotene, vitamin C, potassium and antioxidants, pumpkin strengthens the immune system and protects the body against cancer. It is also effective in protecting eye health with its vitamin A content. 100 grams meet 35 percent of an adult’s daily vitamin C need.

With its dietary fiber content, it helps to reduce cholesterol and protects intestinal health. However, high potassium content may be a risk for kidney patients and high carbohydrate ratio may be a risk for diabetics, this group of patients should consume carefully.

Pumpkin winter soup recipe

  • 2 thick slices of pumpkin
  • 1 carrot
  • 1 small onion
  • Garlic
  • 2 tablespoons of whole wheat flour
  • 2-3 tablespoons oil
  • 1 liter of water
  • Sweet red pepper
  • 1 teaspoon of curry
  • 2-3 teaspoons of ginger
  • Salt
  • Half a glass of semi-skimmed milk

Roast the flour with the oil and add the onion that you chopped coarsely. Then add the chopped pumpkins, carrot, grated garlic and spices and cook until the ingredients are soft. After cooking, mash with a hand blender. When it is warm, add the milk by mixing and heat it on the stove again and your soup is ready.
