SURF AND TURF RECIPE

MATERIALS

  • 300 grams of jumbo shrimp
  • 120 grams of tenderloin
  • 4 cloves of garlic

  • 2 anise
  • 100 ml cream
  • 6 grams of fish sauce
  • 10 grams of siriracha sauce
  • 20 grams of soy sauce
  • 50 ml oyster sauce
  • 5 grams cuttlefish ink

  • Olive oil

  • Rosemary
  • Quinoa
  • Honey
  • Black pepper

PREPARATION OF

1. Shrimps are cleaned by removing their shells so that their head and tail remain. In other shrimp, all the shell parts are removed. Fry the shrimp, garlic, rosemary, soy sauce, fish sauce and siriracha sauce in a deep saucepan, then add 600 ml of water and cook for 30 minutes.

2. The cooked mixture is passed through a blender and filtered. Flour is roasted in butter and cream is added on it. It is mixed with the mixture obtained.

3. Potatoes and carrots are boiled in a pot. 2 pieces of anise are added to the water. After it is boiled, it is passed through a blender and made into a puree. Butter, salt and pepper are added.

4. On the other hand, quinoa are boiled for 10 minutes. When it is boiled, salt, lemon, olive oil and white pepper are added.

5. Cut the shallots in half and sauté, then add salt and black pepper.

6. Mix the Oyster sauce with honey and a little water and cook over low heat until it reaches the consistency. Ink and a teaspoon of honey are whipped with water and made to a consistency that can be spread.

7. A sauce is made by mixing honey, mustard, black pepper and salt.

8. Finally, the tenderloin is cooked in butter. The first made head shrimp is also added. The last inked mixture is applied and covered with quinoa.

9. A plate is served using the sauce and purees obtained while serving.
