The chef of the restaurant, Chris Bleidorn, said that he loves poultry. He explained that everyone should think a little more about the chickens they ate, and that he used such a method. Bleidorn’s two-year-old Michelin-starred restaurant Birdsong. In March, it had to close due to the new type of coronavirus (Covid-19) pandemic.
Then, last month he opened his new restaurant called Birdbox with the concept of fried chicken.
“In Birdsong and Birdbox we use the whole animal and we don’t like to waste it. Poultry is consumed extensively in the world and the vast majority of animals go to waste. People don’t care where the chickens they eat come from and under what conditions they are raised, and how much skiing is spent.
